Just + Giusto = Justo!
From the English word ‘Just’ and the Italian word ‘Giusto’ meaning right. Cesari Justo is an Italian red that’s classed as an “appassimento” style wine – the grapes are dried for a short period of time (roughly 20 days) resulting in a wine that they think is Just Right!
The wine is 60% Corvina and 40% Merlot. If you’re new to Corvina (also known as Corvina Veronese) just know it’s a grape that’s almost exclusively grown in northern Italy, especially Veneto which is where this one comes from.
Justo is the kind of wine Pinot Noir drinkers will love. It’s got lots of juicy ripe fruit and cherry flavours with a smooth, velvety mouthfeel.
As for a food match try it with game and stewed meats and mature cheeses.
